I have been crocheting edges on some of my loom projects for a while for a while. I make 3 single crochet stitches in the corners. Just make sure you are using the correct size hook for your yarn, or you will get gaps in your corners, and then finish off with a slip stitch in my first stitch so that it looks all nice and neat.
